* Olivotto use tins instead of glass bottles because light affects the quality and flavor of the olive oil. Olive oil contains chlorophyll. Chlorophyll transforms light into oxygen and sugar (photosynthesis process). So if you expose olive oil to light you oxidize it, it becomes very yellow and transparent with high peroxides and low bio-phenols.
